Strawberry Granita

Strawberry granita is a refreshing and gorgeous frozen treat that originates from Italy. It's perfect for a hot summer day when you crave something light, fruity, and cool.

Ingredients
  

  • 1 lb fresh strawberries washed, hulled and sliced
  • 3 tbsp sugar
  • ½ cup water
  • 1 tsp lemon juice
  • ¼ tsp balsamic vinegar

Instructions
 

  • Stir together sugar and strawberries and then leave them for an hour! (this is when the magic happens!! You can leave them for longer if you like.
  • Add them plus the other ingredients to a blender and puree.
  • You can strain it now if you don't like seeds, but they don't bother me.
  • Pour the mixture into a 9 × 13-inch pan or you can use any container. I use a plastic container.
  • Put in the freezer.
  • After 30 minutes, take it out and stir with a fork, breaking up the ice crystals.
  • Repeat this step about every 30 minutes for about 2 hours.
  • Serve immediately or wait a few more hours.
  • If it freezes up completely, then you can let it thaw slightly and put in a blender.

Notes

  •  
  • 1/2 cup granulated sugar (you can adjust this to taste)
  • Zest of 1 lemon (optional, for extra flavor)
